If one bakes a sweet potato pie (or for that matter any pie) with components of egg and/or dairy nature in its formula-recipe, it is mandatory -- in order to avoid time-temperature-sensitive spoilage (and with it food poisoning(!)) -- to refrigerate it upon its cooling off after baking.

What's the difference between a yam and a sweet potato?

In many American grocery stores, the vegetables labeled “yams” and “sweet potatoes” are just different varieties of sweet potatoes—when a softer, orange-fleshed variety of sweet potatoes hit the U.S. markets in the mid-20th century, they were labeled as yams to differentiate them from varieties Americans were already familiar with, and the name stuck.

True yams are somewhat rare in the United States. They’re starchier than sweet potatoes, they have a slightly different shape (sweet potatoes taper toward the ends; yams stay more cylindrical and can be up to five feet long), and their skin is rough and bumpy. They’re more comparable to a white russet potato than a sweet potato, and they’re commonly used in Caribbean and West African cooking.

Can sweet potatoes be cut ahead of time or will they turn brown?

yes you can and to make them not turn brown or anything thing (like sliced apples) ex. just put them in water and add some sort of an acid like lemon juice; that will stop them from browning.

I agree with answer #1. A little lemon juice, orange juice, or anything acidic will keep apples, etc, from turning brown. This is a must when making guacamole salad which will turn dark very quickly. Tossing guacamole pieces in lemon juice first will keep the salad a beautiful green for a long time.

When preparing the fruit or veg for a dish you are busy with you can cover with plain water.

You can cover with slightly salted water or add something acidic to the water, if you will only be using the fruit or veg later. When adding apples to a savoury / spicy dish like curry I would use salt, although the salt won't go well with desert.

all of these are correct, but for sweet potatoes, among many things, i'd recommend using tartaric acid (cream of tartar) with water. it doesn't take much at all, it is cheap, and it won't alter your flavor like citric acid or salt will.

Why would a sweet potato still be somewhat hard after being cooked for one hour at 400 degress?

Oven at 500 F , foods cook at 200 F if wet with water

Sweet potatoes are cured at maybe 105 F , at very high humidity .

for weeks ...If not cured , and you try to cook S' P' or Yams ,

you get nothing .

Many foods lose water , then cooking temperature goes up

and starch converts ,,flavor comes out !

From Cindyc40: I always pierce the skin of each sweet potato with a sharp knife and then wrap in aluminum foil. Place on baking sheet (as they can leak) and cook at 400F for about 1 1/2 to 2 hours. Sweet potatoes take at least 2 times to bake done than a regular russet potato.

From raDzer0: If you want them to cook a good bit quicker but keep the fresh from the oven (vs microwave) taste. Put them in the microwave for around 1minute per lb. It will per warm them internally and could cut 20-30minutes off the baking time without any change in taste.

because that's how its suppose to be

When making housemade potatoes (regular or sweet potato), blanch (par-cook) in a deep fryer or par-boil in water. Then deep fry or roast to finish. If you cook potatoes from raw, they take forever. This is much faster and they have a longer shelf life.

How long do you cook a sweet potato and at what temperature?

Cooking Sweet Potatoes

Our sweet potato cooks give some advice:

  • I usually bake a small- to medium-sized sweet potato for 40 minutes in a 350-degree oven. I usually pierce it once or twice with a fork and put foil under it while it cooks. Something I have found very delicious is adding a little butter, brown sugar, maple syrup and a few raisins to the cooked potato after it comes out of the oven.
  • Choose sweet potatoes about 8 oz each. Bake at 450 degrees for 20-30 minutes until soft when squeezed between the folds of a towel. You can also boil the potatoes for 15-25 minutes. Small slender potatoes can be left whole, but larger ones should be cut in half.
  • You could also throw it in the microwave till nearly done and finish off in the oven brushed with olive oil to crisp the skin. This will help to conserve energy so that your oven is not running so long.

What is the difference between a sweet potato and a yam?

Yams and sweet potatoes are biologically unrelated plants. In the U.S. the names are used interchangeably. The majority are different varieties of sweet potato. The main distinguishing factor is that a sweet potato tends to have ends which taper to a point and yams tend to have rough scaly skin. In addition, wild yams have been recorded to weigh up to 130 lbs. There are approximately 200 different varieties of yams with flesh colors varying from white to ivory to yellow to purple while their thick skin comes in white, pink or brownish-black. Their shape is long and cylindrical (oftentimes having offshoots referred to as "toes") while their exterior texture is rough and scaly. There is great confusion between yams and sweet potatoes in the United States; most of the vegetables labeled "yams" in the markets are really orange-colored sweet potatoes. The sweet potato has yellow or orange flesh, and its thin skin may either be white, yellow, orange, red or purple. Sometimes this root vegetable will be shaped like a potato, being short and blocky with rounded ends, while other times it will be longer with tapered ends. There is often much confusion between sweet potatoes and yams; the moist-fleshed, orange-colored root vegetable that is often called a "yam" is actually a sweet potato. Nutritionally speaking:

Sweet potatoes are relatively low in calories and have no fat. They are rich in beta-carotene; having five times the recommended daily allowance of Vitamin A in one sweet potato, as well as loaded with potassium. These nutrients help to protect against heart attack and stroke. The potassium helps maintain fluid and electrolyte balance in the body cells, as well as help maintain normal heart function and blood pressure. Yams are similar nutritionally but are not a great source of Vitamin A. They are a good source of vitamin C, potassium, manganese, dietary fiber, and vitamin B6 (pyridoxine). Yams are also known to help protect against cardiovascular disease, benefit those with hypertension, and believed to be an anti-cancer food.
