Ingredients 2 teaspoons curry powder

1 teaspoon grated fresh ginger

1 teaspoon minced garlic

1 teaspoon cumin

1/2 cup coconut milk

1 tablespoon grated lemon peel

1/2 teaspoon chili powder

1 pound bonelesschicken in bite size pieces

***Peanut Sauce***

1 cup dry roasted unsalted peanuts

OR

2 tablespoons extra chunky peanut butter

1/3 cup coarsely chopped onion

2 cloves garlic, minced

1/2 cup coconut milk (more if desired)

1/2 teaspoon soy sauce

1 teaspoon lime juice

Red pepper flakes, to taste

1/2 teaspoon minced ginger

1/2 teaspoon ground coriander

Directions To a heated skillet add curry powder, ginger, garlic and cumin. Cook over medium heat until curry is slightly browned, about 1 minute. Add this mixture to coconut milk in a bowl. Add lemon peel and chili powder. Add chicken. Marinate for 30 minutes. Put chicken pieces on skewers. (You could skewer onion pieces, green pepper, bamboo shoots or mushroom slices.) Grill over hot coals about 4 minutes. Serve with Peanut Sauce for dipping.

Peanut Sauce

Blend all ingredients in blender to make paste. Cook over low heat, stirring constantly, for about 10 minutes. Serve hot with grilled satay. Thai Chicken Satay with Peanut Sauce serves/makes 4 from cdkitchen.com
