Adam and Eve were not created with immortality. Immortality is defined as "deathlessness," and refers to the quality of life that is enjoyed, its endlessness and indestructibility. Adam and Eve died. They had the prospect of everlasting life, which was to be extended to them with their obedience to the life giver and life sustainer, Jehovah God.
Catholics believe that all men are created as immortal, but probably not as you are using the term. We are all meant to live forever in heaven, some of us will, the rest will live forever in hell.
Adam and Eve were originally made in a state of original justice, thus they were not subject to physical death as we know it. Physical death (the death of the body, not the soul) came into existence with original sin. After sinning, they lost original justice and they lost bodily integrity, and thus were subject to death.
We, as their heirs inherit everything from the original pair - Adam and Eve, thus we did not inherit original justice as they, having lost it, did not have it to pass on. Thus we are all subject to physical death.

Because the story tells how man's relationship with God, the creator and sustainer of life, was broken when Adam and Eve disobeyed God.
