When i did this, i used mung beans instead of lentils because they are easier to grow and doesn't need that much sunlight.But if by cooked beans, you meant the beans from the cans, well then NO, the will NOT grow ever because they are already processed and doesn't have the necessary cells to grow.

In the US at least, green beans have been selected by plant breeders to grow well across a wider variety of climates than red beans. Red beans are typically grown in drier climates with less chance of disease than more humid parts of the country. Your area might be humid enough that red beans develop disease more easily.

In my tacos yes I use red beans. I mash the beans add them to the cooked taco meat and season. You did not ask this but another piece of information for my tacos is I boil the ground beef for the tacos. Drain add beans, season and eat!
