Place the jars right-side-up in the empty canner. Fill canner and jars with hot (not boiling) water to at least one inch above tops of jars. Bring to a boil and boil for 10 minutes.

Remove from water using tongs and place the jars top-side-up on a clean, dry towel. Lids and rings should be boiled only a few minutes.

You need to sterilize all jars you intend to use for canning in a boiling water bath for 10 minutes or under. You do not need to sterilize jars that will be used in a pressure canner, nor jars that will be in the boiling water bath for longer than 10 minutes.

Any foods that are processed 10 minutes or less should be poured into sterilized jars. Place the empty jars in the canner and cover with warm water to one inch above the top of the jars. Boil for 10 minutes before removing. Drain the jars and fill with hot foods to be canned.

For any foods that will be processed in a pressure canner or for less than 10 minutes do not need to be pre-sterilized, as they will be sterilized during the cooking process.

You can sterilize canning jars ina dishwasher by setting it on the Sanitize cycle. Or, you can submerge jars in a pot of boiling water for 5 minutes.

What is a boiling water canner?

Typically called a "water bath canner" it consists of a large cauldron style pan with a removable rack to hold canning jars. Once sterilized canning jars are filled with food items and brand new jar lids are placed on each (with reusable rings finger tightened around the top of them) they are placed in the rack and lowered into boiling water.
