I preserve chillies in olive oil... I cut the chillies up then soak overnight in white wine vinegar. Drain the cvinegar off then put the chillies in jars and fill with olive oil. They are delicious. Hope this helps you.

I roast these potatoes. In a bowl, mix a few tablespoons of olive oil with rosemary. Cut up the potatoes into quarters, put them into the bowl and stir. If you want crispy potatoes, put them in a single layer on a cookie sheet and bake for about 40 minutes at 350. I like to sprinkle salt on them at this point. For non-crispy potatoes, put them into a baking dish and cover. Add the salt and pepper in the olive oil mix. Cook for about the same amount of time.

I wouldn't recommend having a marinade on potatoes overnight. You can cut your potatoes up the night before and have them soak in water to avoid turning them brown/black. Just make sure the water is about an inch over the potatoes. If you want to marinate, an hour of soak time is good enough for potatoes. It's the oxygen that is touching the potatoes that turns them, so there might be some areas of the potato not completely covered in oil. If you still want to try it, make sure to have an airtight lid on.
There are many things that are used to soak up oil that has been spilled. At times, sawdust is used to soak up the oil. Sometimes, a special solid similar to concrete will be used.
There are lots of ways. My favorite is to dice up the potatoes, add olive oil, pour over a Italian dressing seasoning (packets used to make the dressing but don't add anything to it, just use the seasonings straight), stir and then roast them in the over for about 45 minutes until soft thoroughout and maybe even a little crunchy. The olive oil keeps them moist and helps the seasoning absorb into the potatoes.

just because you fell of the wagon one time with the potatoes is not wrong. just get back on track with your diet. it does not hurt if you indulge once in a while.
