No, at least I never have but you have to use Pam or oil up the pan pretty good so it comes out when it's time.
You can in fact bake a cheesecake with parchment paper. The only thing that may be an issue is that the cheesecake may stick to the paper. In this case, you can lightly grease the parchment paper to avoid this.

Yes, parchment paper prevents food from sticking and is especially helpful when baking cookies. Usually you will not need to grease the parchment paper, but I have found it is worth the time to bake what my grandmother called a "try" cookie to make sure oven temperature, size, baking time and surface prep (i.e. greasing) are optimal.
It is possible that they were using parchment paper. I did not see the show, so I cannot say for certain. Parchment paper is kind of a cross between wax paper and plastic wrap. The difference is that parchment paper is safe for use in the oven.

Yes you can. I make full size sheet pan (18 x 26) Pineapple Upside Down Cakes. The techique I use is to first spray the sheet pan with nonstick cooking spray. Then I place the aluminum foil over the sheet pan allowing it to be at least a inch higher then the edges of the sheet pan. The foil keeps the mixture from spilling out when using a shallow sheet pan. After baking I let it cool down and then flip it. Peeling the foil carefully off the cake.
