you don't have to: here is one way to do it, and it comes out soooo good
This recipe will be enough for a big glass for 2 people if you want more, scale it up.
Take the rice and put it in your blender. Pulse it a few seconds at a time for about 30 seconds total. you just want to break the rice up some. Then add the 2 cups of warm water to cover rice. Let sit from2-8 hrs in the fridge. Ideally start it in the morning or the night before.
When your ready pour rice and water into the blender add 1 cup of milk, vanilla, sugar and cinnamon, blend for 1 minute. Pour out about half of liquid add rest of milk, 1/2 cup fresh water, blend again for 1 minute.
Now get yourself 2 containers strain your concoction into the first container, clean the strainer, then strain into the second. You will still have some sediment, but that is ok it will settle you just want to get rid of all the rice pieces .
Now pour over ice and enjoy with your favorite Mexican meal or anytime.
ALTERNATELY YOU CAN ADD 1 CUP SLIVERED ALMONDS, YOU CAN ALSO BLEND THE RICE AND WATER IN THE BEGINNING FOR A MINUTE BEFORE YOU LET IT SOAK. EXPERIMENT WITH THE AMOUNTS AND METHODS AFTER THE FIRST TIME TO FIT YOUR TASTE.
