Most people do, but others like having the peels in the mashed potatoes. I always peel the potatoes first. If you don't, you won't get your mashed potatoes smooth, and it will have chunks of skin in - which don't look great!!

No, just give them a good clean, make sure all the soil is washed off, then cut away any bad bit, scabs etc. Most of the goodness is just under the skin, so unpeeled or 'jacket' potatoes are better for you.

You can eat a sweet potato with the peel on or off. The peel has vitamins and fiber you don't get from eating a peeled sweet potato.
