You would spell it Shi'ite, although a lot of people believe it is Shi'i.
The proper English spelling is Shiite. However, because of increasing cultural sensitivity, the word "Shi'a" and "Shi'i" have been imported into English directly from Arabic. "Shi'a" refers to the group as a unity, such as we would say "the British" and "Shi'i" refers to an individual, such as we would say "Briton". The increasing use of "Shi'i" has led to people inserting the same apostrophe into "Shiite" to create "Shi'ite". Both spellings (Shiite and Shi'ite) are acceptable now, even though the former remains the proper spelling.
