Quick cooking is not desirable when baking cakes. Cakes need to be baked in the center of the oven. The proper length of time is necessary for even rising, thorough cooking and to prevent scorching.

When baking cakes in 13x9x2 pans cook one at a time so that each cake will cook evenly throughout. If you put two together part will cook and part will not because the heat cannot circulate evenly.

Cakes are heavy because they're supposed to be big. ------------------------------------------------------------------------------------------- When making a cake it is important to follow the recipe EXACTLY - make sure that the recipe you are using is OK by following one from a book (sometimes hand me down recipes have mistakes in them). If you do this and your cakes are still heavy then check the temperature of your oven (get an oven thermometer).
