Crepes are not the staple food in France. You don't find crepes shops, and they are not sold on markets. That said, if this is your idea, you could go to a creperie (restaurant that offers crepe-based menus) and eat the simplest one for between one and two euros.
Nobody eats crepes especially on Bastille Day. The crepes stands are just one among many street food stands that exist, and are relatively recent as far as street food outside of Brittany is concerned, not a French tradition.
In Sweden we eat thin pancakes and we just call them "pancakes". The thicker pancakes we call "American Pancakes". We eat our pancakes for dinner or lunch, but we eat it with jam, not with marple syrup. Or mayby you mean Crepes which are French pancakes with a delicious filling inside.
