Gluten is the protein found in wheat. In the US, vendors are required by law to list wheat if it is an additive. Hamburgers are usually presented in a bun or bap and, unless especially made to be gluten-free, this type of bread product will contain gluten. Similar proteins which are harmful to Coeliacs are present in rye, barley and possibly oats. Wheat, rye and barley are therefore excluded from the gluten-free diet. Oats may be allowed for some patients, under careful medical and dietetic supervision. The rule-of-thumb is, if you don't know - don't eat it.
