depends on how far behind your ipod is behind in updates (ex. my ipod is a 4.3.3 and your updating it to a 5.0.1) will generally take longer and the download itself takes from an hour to 4 hours
When you plug in your iPod to your computer or laptop with the connector provided when you purchase the iPod. It should prompt you that there is a newer version available for your iPod, before you update it make sure you back everything up becuase it will restore your iPod and you wil lose everything but if you back it up you can sync it all back on to your iPod.

A lot of people seem to have this problem. I myself have an iPod touch 1st gen that has 3.0 Firmware jailbroken on it. Mine can take as much as a minute to connect to our home wifi. I believe it has something to do with a driver update they did for 1.1.4 to support wpa-enterprise security because before that (1.0-1.1.3) my iPod could connect in literally a few seconds.
