I do not think it would work well. Creme fraiche is not sweet, and has a taste similar to sour cream. So if you do want to use creme fraiche as a filling, I would recommend experimenting with different additives such as sugar and flavorings first. The best thing I can think of to add to creme fraiche that may work would be maybe some instant pudding mix (the flavor of your choice), mixed with the amount of milk called for on the box to use as a pie filling. You could use that, then mix with the creme fraiche, and maybe add some whipped cream to it, too.
