When cooked some of the vitamins will be removed from the veggies, the more you cook it the more of the vitamins are removed, but that does not mean they are not healthy for you! I would advise steaming your veggies, this cooks them but does not remove as much of the nutrition.
They are not as healthy as raw vegetables but they still have a fraction of their nutritional value.

Definetly not. Stick to feeding your tortoise fungi, plants, fruits and veggies as cooked bacon can lead to serious health issues for your tortoise.
Veggies are healthy cooked, and uncooked. However, cooking vegetables does cause some of their nutrients to leach out into the water they are cooked in. Steaming or roasting doesn't cause as much loss.
