Studies have shown that watermelons last longer and also retain their nutrients and antioxidant levels better at room temperature than in the refrigerator. According to WebMD (see link), the average shelf life of watermelons after harvest is 14 to 21 days while stored at 51 degrees, but decay can occur in as little as a week when stored at refrigerator temperatures of around 41 degrees.

Once cut, watermelon should be refrigerated.

A watermelon does not go bad when the juices thicken. When the juices start to thicken a little put it in the fridge for about an hour or so and when you cut it open you will have a nice juicy watermelon.
