I just pulled out my handy kitchen scale, a four cup (or one quart) measuring bowl with one cup incremental markers, a knife, a large spoon, and of course a watermelon.
My watermelon weighed about eight pounds including rind.
I placed the measuring bowl on the scale and tare/zero'd the scale.
Next I cut up and measured/weighed my watermelon. Below are my results.
First, I using a large soup spoon to scoop out random chunks, most too big to eat in one bite. When the scale hit one pound I jiggled (shook?) the bowl to level out the fruit. It was pretty close to full. So in large uneven and oddly-shaped chunks, one pound rendered nearly four cups of volume.
I just cut up a pound of watermelon into bite sized pieces (approximately one inch cubes) and it filled a just over three cups in my four cup measure, so I would say three cups conservatively.
I imagine if I had done a smaller dice, we would find the results closer to the liquid measure of 16 ounces which equals 2 cups in most liquids.
