Only certain dogs and cats hate each other.

Sorry I had to change the grammar on that above answer. But like the above, it does depend. But most likely it is because they are at two different ends of the spectrum of life. They are different animals all together.
Also, many dogs enjoy chasing cats and some even try to eat them. I don't know about you, but I wouldn't particularly enjoy someone who tried to eat me! But often times it is just a game, and cats are just in general annoyed by it, and want them to mind their own business.
Dogs may not like cats because maybe the cat doesn't want to play with them, or, because dogs can get jealous, the cat might get more attention than the dog, or so it thinks.

Not all dogs and cats hate each other. In fact, many households have dogs and cats living together and can develop close bonds.

However, some breeds of dog have high prey drives which can pose a danger to a cat. These breeds of dog still have the instinct to "hunt" anything smaller than it. A family dog may not think twice about the family cat, but if the dog is out and about and sees a cat run from it, the dog will chase it down-prey.

Some cats don't like sudden movements, loud noises or anything larger than them. Other cats have been known to fight a dog many times its size if it feels threatened.
