water erodes a canyon by carrying sediment from the rock walls down the river
They are actually formed by a combination of the two. The water flowing through the eventually-to-be-river-valley erodes the earth beneath it, carrying away loose sediment. Simultaneously the sediment being carried away weathers the ground beneath it with the friction caused by one object rubbing against another.
Weathering and erosion deepens and widens canyons.

Erosion
small stuff
Earthquakes occur along the faults, and volcanoes form when magma reaches the surface, and then the valleys form from erosion.
Normally flowing water, such as rivers will slowly cut through land to form valleys cliffs and trenches.
No, glaciers form from snow that falls high in the mountains then consolidates and refreezes into ice under the weight of later snows. This ice and snow then flows down the mountains into valleys producing a characteristic U-shaped erosion pattern in those valleys.

Erosion and weathering: Glaciers form 'U'-shaped valleys, while rivers form 'V'-shaped valleys.

The formation of the Grand Canyon was accomplished by the constant erosion of the rock by the Colorado River over some 17 million years. Over time the river was able to carve a very deep channel into the Colorado Plateau. Links are provided to specifics regarding the geology of the Grand Canyon.

Pre Deposition is formed by erosion, cliff, aches, and beaches.
There are only a few types of canyons. These are river canyons, mountain canyons, and canyons that were formed by weathering and erosion. +++ Very few types indeed. One in fact! All canyons are formed by weathering & erosion; and all are or were river canyons irrespective of mountains. The requirements for a canyon or gorge to form are a high plateau catchment area feeding a large river for sufficiently long for it to cut back from a steep rim.
Canyons are formed by erosion. Rivers that were previously located there slowly wear down rock and form large canyons in the rock.
