Depending on which tube you use the 17mm or 19mm, the 17mm you cook for 3 1/2 hours at 170 and the 19mm you cook for 4 hours at 170. Do not let them set in the oven or they will become dry. I use a oven because smoking the sticks gives the meat a bitter taste.

I would be much more concerned with meat bought at a store than I would with deer meat. Vension is very lean and healthy to eat. You just need to know how to cook it and you'll be livin large!

Deer meat can be termed venison whether it is cooked or not. The term venison (which can be fairly applied to a few other meats) has been handed down from at least the 11th century and before. It was applied to meat that came from animals that were hunted. And that was a lot of animals. The word venison is derived from the Latin word venor, which means to hunt or pursue. The difference in names of live animals versus when they become food is a result of the Norman conquest of England. The Anglo-Saxon natives of the island who tended to the herds of cattle or sheep and hunted the deer called them by their old English names, names derived from the German language. The Normans lords, who saw the meat only when it was on a plate in front of them, spoke french and called the meat by its french name.

I have eaten Venison that I had frozen for up to 1 year. I had it wrapped tight and sealed in an airtight plastic bag. (seal a meal) It was good. You have to keep the air out so it wont get freezer burn and if it thaws out, don't refreeze it. By the time I eat it all it's hunting season again. Good huntin! Keep yer powder dry! I eat Venison every day. It is a great source of protein and much leaner than beef. It's a cheap way to get meat and being organic. Thus far I've not noticed any side effects of eating it such as some do eating beef daily. I do live an active life as well, lifting weights and running so that helps aid in my health. If being super active like me isn't your thing I would recommend eating venison/deer meat moderately. I probably wouldn't eat it every day, maybe 2-3 times a week at max.

It can be, as it's more leaner than your typical corn-fed beef steak. Game meat is often more healthier than farmed beef because it's not fed any of the nasties like growth hormones, antibiotics, feeds that aren't good for it in the first place, things like that. Venison does contain fat, don't get me wrong, but it's a different kind of fat; kind of like the fat that you get from grass-fed beef.

A common grape varietal for paring with these two meats would be wines made from Syrah/Shiraz grape. These meats can be rich, have some weight and for the lack of a better term 'gamey'. The term gamey is not being used in a negative way but since these two meats tend not to be farmed , raised and processed in the same rigorous manner as beef and chicken it can tend to not take on the sterile smell of chicken or beef. Take a look at Syrah from the northern Rhone regions of France like... Croze Hermitage, Hermitage, Cornas and St. Joseph. These wines tend to take on a rich fulfilling gamy/earthy quality character of their own. You can also find Syrah in the French region of Languedoc-Roussillon which is a large region situated around the Mediterranean cost in the south of France. Both of these regions tend to blend their wines with other red grape varietals such as Grenache, Lladoner Pelut, Mourvedre, Cinsault, Cousine as well as other varieties that give the wines a rustic profile. If you prefer Syrah wines that are less earthy and more lush, rich fruit try Syrahs from areas like South Africa, California, Australia and South America. Other wines to try would be those from Southern Rhone which are Grenache based but tend to carry a rustic quality are from Chateauneuf-du-Pape, Gigonds, Lirac and Vacqueyras. Grenache from New World countries may tend to be 'too pretty' for game meats. If you really want to get into the spirit of things try Pinotage, Pastougrains, and Nero d'Avola wines.

I would not take a chance on eating venison that has been frozen for three years in a regular household freezer. I'm assuming it's also wrapped in butcher paper. I think if you defrost it, it will have an odd smell. If you don't want to waste the poor Bambi, I'd bring it back out into the woods and leave it for wild carnivores. Do not leave it near houses as it will attract skunks.
