Are you sure it has to be happy holidays? I know some for happy Christmas. Hyvaa (with two dots over the "a"'s) Joulua, Joyeux Noel (with two dots over the "e" in "Noel"), and Halikimikimakka (I think that's how it's spelled...) Those were in Finnish, French, and Hawaiian, respectively.

To wish someone 'have a nice holiday' in French you would say either 'Passez de bonnes vacances', 'Je vous souhaite de bonnes vacances' or just 'Bonnes vacances!' In Irish Gaelic (Gaeilge) it's 'Go raibh saoire bhreà agat' to one person or 'Go raibh saoire agaoibh' to two or more people.
