It depends a lot on what you're doing at the time. Extreme exercise means you need more Kcals and water. Being sedentary means you need less.

Regarding food, during the bad old days of The Troubles in Ireland, one of the captured IRA went on hunger strike, and survived over 80 days with no food, although at the expense of his health and physical condition.

Water, on the other hand, is much more critical. You can dehydrate in certain conditions in just a few hours. Sedentary and in reasonable temperature and humidity, you might have as much as 5 days, which has occurred from time to time, but that's pushing it.
