All humans will have to deal with people in life they do not like and it is a better person of character that can be polite to that person to a point, but keep the conversation short or, if you have to work with that person keep questions or any communication to a minimum. One is two-faced when they are just are polite, but they are overly nice; perhaps may ask the person to have lunch with them and then talk behind their backs to others.

It is not polite to say "No, You are disgusting." But if this person is rude then you do have a right to say it. If not, its not polite.
You could deal with an overly demanding boss by always being polite and respectful and doing your work. If this is a constant problem, go to HR or call EEO for remedies.
