With any food, and air, small amounts of bacteria are present. When you put anything in a sealed container for too long, the bacteria will continue to grow and then multiply faster as humidity and decay starts occurring.
Also, even though plastic bags seem air-tight, microscopically, air can slowly work it's way in. A plastic container will simply slow the rate the food will deteriorate, it won't stop it.
