If ,for example, you wish to cool a bottle of milk place it in a dish of water and put an upturned porous clay pot over the bottle. The clay sucks up the water in the dish by capillary action and as the water evaporates it cools the inside of the pot by a process known as the 'latent heat of evaporation'. You cannot get the milk to freeze but you can lower it's temperature.
