To change the thumbnail (cover) of your video you need to go to edit video and go down you should see three video still from your video you select one of them and click save.
Note: Sometimes the thumbnail (cover) will not change immediately sometimes it will tell you it will change in 6 hours same thing goes for your avatar.
You can't change a language for a youtube video. The video is uploaded in whatever language it was recorded in. You can only change the language for the youtube page.
