You can test it on the stove in a pan of water and use a food thermometer. It should be fully open at rated temp 160-185 usually.
The mark 8 could have a bad thermostat, or a bad water pump. Check the coolant level, then the thermostat and water pump. If these are ok, check the cooling fan circuit.
U take the thermostat out, get a pot of water, put the thermostat in it and start it to boiling. When the water reaches the temp that the thermostat is designed to operate at it should open , if not , it is defective
