1. Grease splatters when it spreads out over the bottom of the frying pan. Use a pan only slightly larger than the number of patties you intend to cook.
2. Use leaner (90%) ground beef. Less fat equals less spatter but also less flavor.
3. Buy a splatter screen that rests on top the frying pan. Cost: $12 - $25
4. Fill the open spaces around and between the burgers with sliced fresh mushrooms. They reduce splatter, cook in the burger's juices and are done when the burgers are.
5. Don't add oil to the pan even if your pan is not Teflon coated. The burger will initially stick to the pan but will "release" itself when the proteins have caramelized; usually just in time for flipping.
