The easiest way is to watch them urinate - if the urine comes from under the belly then they are male if they squat and the urine comes from under their tail then they are female.
Your doe will wander away from the herd to find a quiet place to kid. She will most likely be uncomfortable and stretch, yawn and get up/lie down a lot.
