There are a number of ways to determine if chicken is thoroughly cooked and ready to eat.
For any whole bird, you need to check the temperature in the breast section. This is the thickest portion of the bird so it needs to be cooked / baked evenly throughout. If you checked say a thigh or wing, you would not know if the bird had reached the right temperature throughout the tissues.

To check if a whole stuffed chicken is done, insert a skewer into the deepest part of the bird. If the juices run clear, the chicken is cooked properly.
