Radiator level will drop, also if it get's into the combustion chamber exhaust will be white smoke, oil level will rise and may change appearance/consistency and compression will be lower on effected cylinders-can be tested with a gauge to see which head it is.

Top hose of radiator is hot and engine is still over heating usually.
If the engine is warmed up, the thermostat has opened and coolant is circulating, the pump is pumping.
Just look at your engine oil and you can tell, if it looks milky there is water getting into the oil and that's the sign of a blown intake gasket or head gasket.
This sounds like bad news. The coolant could be leaking into your engine and mixing with the engine oil, then cooking off. A simple test can tell if there's water in your oil.
easiest way to tell if water pump is working is to run engine until at running temp. then carefully remove radiator cap. with someone slightly reving engine, look into radiator. if the pump and thermostat are working correctly, you will see the coolant moving(circulating) in the radiator
