Well first of all the water was not polluted (but if so they clean animals in it) they could be poisoned by other religious people (Like Middle age Islam and Europe in the crusades).
Actually, it could be polluted. Of course there were no dangerous gases to pollute it, but everyone littered. They just left their trash on the ground since there was no where else to put it. The trash would eventually go into the water and pollute it. This is what caused the black death (or plague.).
