Israel did not get ALL the water supplies. Israel does not have access to any of the three main rivers of the Middle East such as the Nile, the Euphrates, or the Tigris. However, they were able to gain control of all water sources in the former Mandate of Palestine as well as the Syrian sources for the Sea of Galilee (which is actually a lake). They acquired these sources through the territorial control that they exercised post-war and they acquired those territories during the war by defeating the incompetant Arab armies that were holding onto those territories prior to the war.
During the war of 1967, Israel took control of the Sinai Peninsula. It was returned to Egypt under the terms of the 1979 Peace Treaty.

Many things happened after the Six Day War ended. Most importantly, Israel was allowed to occupy the territories acquired during the war subject to future peace negotiations with Arab countries. Since the USA kept Israel from being defeated and wiped off the map by the Arab nations, they put an oil embargo on the USA.
