Sadly, Europeans of that period were not aware of the many cultures of the rest of the world. The Crusaders knew they were going to fight Muslims, but their idea of Muslims wasn't much more specific than "not Christians," or more particularly, "not like us." The Eastern Jews looked as strange as the Muslims.

At a Jewish funeral can a Non-Jew lead the unveiling of a headstone?

The rituals surrounding death and burial in Judaism are very specific. The funeral must be lead by either a rabbi or someone Jewish (in non-Orthodox communities, it can be either a Jewish man or woman). Although it might be acceptable for a non-Jew to speak at a Jewish funeral in some communities, it would never be appropriate for that person to speak on behalf of the family.

What are the similarities between a imam and a rabbi?

Islamic communities and mosques usually have an imam. Jewish communities and synagogues usually have a rabbi. Neither Jewish nor Islamic services require an ordained leader. In both communities, any knowledgeable layman can lead services. Rabbis are expected to know halacha, Jewish law, and imams are expected to know sharia, Islamic law. Rabbis are expected to know the Torah and the associated oral tradition, the Talmud. Imams are expected to know the Koran and its associated oral tradition, the Hadith.

What is the role of a rabbi in Judaism today?

Rabbis teach Jewish law and traditions. Congregations hire rabbis as leaders, both to lead services (although any knowledgeable adult Jew can lead services) and to act as spokesmen for their communities. Rabbis make decisions about matters of Jewish law, leading Jewish courts that oversee such issues as divorce and conversion to Judaism (sometimes, Jewish courts judge other kinds of civil cases where the law allows binding arbitration).
