It is very hot in the summer; houses rarely used to have ovens - people used to "share" the baker's oven. In fact the Greek for "baker's shop" is "oven".
The Greek's sincerely believed that eating hot food is bad for you. The Greeks are also the longest living race in Europe, so there may be something in that.
Fuel is quite expensive in Greece.
Little food used to be imported, so local, seasonal ingredients were the basis of most dishes.
They ate their meals with their hands. There was no silverware back in their time.
