How do Christians rationalize the fact that close to all the writers of the New Testament never came into contact with Jesus personally?

Christians see nothing there needing to be "rationalized."
2 Timothy 3:16, 17 - All Scripture is given by inspiration of God, and is profitable for doctrine, for reproof, for correction, for instruction in righteousness, that the man of God may be complete, thoroughly equipped for every good work. [NKJV]
Because of the divine inspiration of the Holy Spirit, it was by no means necessary that all the writers of the New Testament have "personal contact" with Jesus.
Besides, the contention that "close to all the writers...never came into contact with Jesus personally" is incorrect. The only NT writer who almost certainly had no personal contact with Jesus was Luke. None of the other writers can positively be excluded. Consider:
Matthew: One of the twelve.
Mark: A disciple, possibly present when Jesus was arrested.
Luke: A Gentile convert who did NOT know Jesus "personally."
John: One of the twelve.
Paul: Experienced extensive "personal contact" with Jesus by means of visions.
The Hebrew writer: Unknown, so uncertain.
James: Probably Jesus' own half-brother. Even if not, all the prominent men named James in the New Testament knew Jesus personally.
Peter: One of the twelve.
Jude: Probably the brother of James, and another half-brother of Jesus.
