Yes. If you update your iPhone's software using iTunes it will lock your iPhone again. You will then need to unlock it again.
Just reload them on there. If you have ever backed up your iPhone, you can just sync it again from the last backup. If you haven't backed it up, then just connect to iTunes and re-download and transfer everything again.

To unlock a disabled iPhone without a SIM card, you can use iTunes or Finder. Connect the iPhone to a computer where you have iTunes installed, or use Finder on macOS Catalina or later. Put the iPhone into recovery mode by pressing the appropriate button combination for your model, then choose the "Restore" option when prompted. This will erase the device, allowing you to set it up again as new or restore from a backup.
Maybe
When you plug your device into iTunes you can sync to the last time you updated. Just go to the home screen and click "backup" it will chose the last backup and make sure you really want to do it. Or just download the app from the Apple app store again, you won't have to pay again, it'll notice you had it before.
Go into iTunes and change the name of your iPhone. In OSX, you just click on the name of your phone on the left hand side (under devices), then click again to edit the name inline.
