When you plug your device into iTunes you can sync to the last time you updated. Just go to the home screen and click "backup" it will chose the last backup and make sure you really want to do it.

If its an iPhone then download iTunes (if you haven't already) and plug both of them in using a USB charger. Then sync the apps off you iPod on to the computer, then simply click and drag them into where it says iPhone.
