They don't, unless they're non-traditional Jews. Acknowledging or imitating Christmas in any way constitutes a nod to idolatry, since Christmas is in fact a religious Christian occasion, despite having been commercialized and manipulated. For Jews, Christianity is idolatry, which is why they've historically given up their lives rather than accept it or any of its observances.
Even for Hanukkah itself, Jews who give gifts to each other are imitating the non-Jewish custom. That's why observant Jews avoid this practice. The only exception is the gelt (coins) given to children, which is an ancient custom.
Hanukah is a Jewish holiday and there is only one country where the majority of the population is Jewish--Israel. Hanukah is celebrated in many other countries, but only by individuals in those countries who are also Jewish. Actually,there probably aren't that many Jews who really celebrate Hanukah like American Jews do since it is a minor holiday. American Jews have made a big deal out of it because it comes at the same time as Christmas and it helps them not to feel left out.
