It's like this: environments have, are, and will change constantly. The organisms that thrive in a certain environment need to make changes to themselves to adapt. For example, before elephants, botanical food was easy to reach. If at one point in history, they grew, the elephants needed a way to eat the leaves off of them. Hence, their trunks. So it's basically a never-ending "Survivor" challenge.
