Harvest what? In some countries no farmer harvests or grows anything in the winter because of the frost in the ground and the snow on the ground.
In some parts of the US, this winter most notably northwest Ohio, the fields were so overloaded with precipitation during the autumn that the farmers had to wait for the soil to freeze solid enough for the combine harvesters to run on top. One farmer didn't finish harvesting till February 10th. This can also happen some years in North Dakota.

Not harvest, harvesting. Harvesting is when farmers collect the food that they have grown over the year etc. For example, the fall harvest. The fall harvest is when during the fall farmers would collect the food that they need to save up for the upcoming winter. Nowadays people don't really say harvest anymore, but if you come from a farm farm (like tranditional farm not the grow products kind etc.) then they would use this term (only some of them).Hope this helps~!
