Fish can disappear seemingly without a trace by several methods that I am aware of.
1. Fish can jump out of the aquarium through small gaps in the top of the aquarium, and can be eaten by pets (cats/dogs/rodents), or vacummed/swept up before being noticed by the aquarium keeper.
2. If left long enough, a small fish carcass will be eaten and degrade into almost nothing but perhaps some very small bone fragments, that would be difficult to find/identify as fish remains.
3. If more than 1 person is maintaining the tank, then one might have removed the body of the fish before the other person notices, and then not told the other person of the dead fish.
4. In an extremely lushly planted or decorated fish tank, small, shy fish can go unobservered for several months, despite being healthy and alive.
