There are two types available for the Gen 2 S10/S15/Blazer/Jimmy/etc. I know this, being the owner of a 97 Blazer. The simplest ways are to either count the number of bolts holding the diff cover on, or find the tag on the differential (take a couple rags with you, because it'll be coated in oil, road grime, etc). I don't believe there's an RPO code pertaining to this.

The best place to find the diagram for the rear differential on a 2000 GMC Jimmy is at the dealer. The dealer carries diagrams and manuals for all the the repair work.
To change differential fluid on a 1997 CR-V the vehicle needs to be lifted up to reach the rear differential. Find the drain plug located on the underside of the unit. Pull the plug and drain the fluid, when done place the plug back add fluid into the fill hole which is located topside of the differential.

A thermostat gasket is a gasket for a thermostat, a head gasket is a head gasket. The top part of the engine needs to be disassembled to repair the head gasket. You can find information on your specific car in your local library. You may even be able to access this online if the library has the databases available.

Most Camrys do not have screws for the cover gasket. Fasteners are rather used. There are 4 of them (4 cylinder). You can find them on each spark plug tube.

The speed sensor ring is in the differential case in front of the ring gear. To get to the unit you will need to remove the differential cover and drain the lube which requires replacement along with the cover gasket. Check to find out what lube you need to use and if synthetic is required. If you are not familiar with differential or transmission work you may want to get an estimate from a transmission shop or your mechanic.
