In order to smoke oysters you need to season them and put them in a glass or ceramic baking dish on the grill or in a smoker. Use fruit wood like apple, cherry or even the alder wood chips are nice and not to strong. A good 30 to 45 minute smoke at 200 F, higher they will become tough. You need to check on them, and when they are done there is no give. You can pack them in a lot of light olive oil.
