The main nutritional content of most meats are protein, iron and fat. There are many foods that contain these things, and can easily be substituted for meat.

Protein can be found in eggs, cheese and pulses.

Iron can be found in chick peas, bran flakes, spinach and other dark green leafy veg, etc.

Fat can be found in anything greasy! Chips/fries, nuts and seeds, cooking oils, etc.

Preference/Taste

And if you're referring to the taste, vegetarians often don't like or want the meaty taste and texture. Those that do have another reason to exclude it that's important to them, sometimes moral or religious or environmental. For some it's hard to imagine, but it's the same as some people not liking toast or not wanting to drink alcohol.

A lot of people might see it as an unbalanced diet, but vegetarians are generally healthier because they're more thoughtful about what they eat. They're often no more likely to become weak or anaemic for this reason.

Vegetarians survive quite well without eating meat or dairy products.

Vegetarians are overall healthier than meat eaters! Every nutrient found in meat also has a vegetarian source (where do you think the animals get them from?)--for example:

Protein: Beans, whole grains, nuts and seeds. Some vegetarians include eggs and dairy products in their diet.

Fats--plentiful in the vegetable kingdom

Vitamins and minerals--all are available in plant form.

There are tons of books, articles, and internet resources for vegetarianism. The more informed you are, the better food choices you can make.

Millions of people are vegetarian. Many people converted from meat eating to a healthier vegetarian based diet. Try going vegetarian in steps, not all at one time. Becoming vegetarian is a good move towards good health.

Still other people abstain from eating meat because meat production takes a large toll on the environment, and grains and legumes used to feed livestock could go a long way to solving human hunger.
