I've read this info online. You need to have the eggs beaten in a separate bowl...and have them set out for a bit so they are not right out from the frig and super cold. Next you take the hot liquid you want to combine with the eggs and slowly dribble the mixture into the bowl with the eggs while constantly whisking quickly. After a good portion of the hot liquid has been added to the eggs test the temperature of this mixture with your finger. You want to get the temperature of the egg mixture as close as possible to the temperature of the hot liquid. Once you've achieved this you can either continue pouring the rest of the hot liquid into the egg mixture while whisking or you can pour the egg mixture into the container holding the rest of the hot liquid and combine thoroughly.
