There are 2 ways you can Dodge attacks: By Shield and by Luck. Equip your character with a shield item (if they can) every now and then when they get attacked they will block using their shield. Having Luck increases your chances to evade attacks in the older Final Fantasy's in the newer ones their is an Evasion Stat that you can increase by certain means.
