Well if it's Gohma it's easy, you just need to shoot her eye and kill her with your sword. If it's Phantom Ganon, you need to shoot him some arrow and when he get off his horse, he will shoot some magic at you. Just attack the ball and it will bounce and attack Ganon. But sometime he will reattack it. So it's a wild Tennis
game! :D
