You can only do so if the theme you are using allows you to. Some do not. If yours done, it will be under the customize bar when you change your customized settings. If it does not show up, the theme you have applied does not allow it.
That is completely based on your theme. Usually, if the theme you're using permits, you are able to do so under the "Customize" page. Some themes do not allow you to change colors at all.

When you make a text post, Tumblr automatically makes it double spaced. If you want it single spaced, you have to hit SHIFT and ENTER at the same time. Then, you'll have a line right below the one above.
